This is one of my favorite chicken marinades! The ingredients are simple and I can toss it together if I’m short on time. The chicken come out juicy and flavorful every time!
In my house we eat COPIOUS amounts of chicken breast. It’s lean, it’s healthy, it can be dressed up or down… but it can get a little boring. That’s where fun marinades come in!
This marinade is mediterranean-inspired. It’s perfect for grilling up traditional chicken souvlaki (kabobs). I love this chicken on salads or in a pita with some tzatziki sauce. So. Good. And you only need to marinate your chicken for 20-30 minutes for the full effect. Don’t worry, you can leave it overnight, too, if you know you’ll be cramped for time.

Mediterranean Chicken Marinade
Prep time: 10 min + 30 for marinating
Cook time: 15 min
Serves: 4
1 1/2 lbs. chicken breast, cut into strips
3 T. oregano
2 T. garlic powder OR 4 cloves minced
3 T. olive oil
Juice of 1 lemon
1/2 t. cumin
2 T. fresh parsley, chopped
1/2 t. chili flakes
1/2 t. salt
1/4 t. pepper
1. Add all ingredients into a bowl, cover and refrigerate for 20-30 minutes, up to overnight.
2. Preheat oven to broil.
3. Lay marinated chicken strips out on a baking sheet, make sure they’re not overlapping.
4. Cook under the broiler for about 5-7 minutes, pull the chicken out and turn the chicken strips over. Broil another 5-7 minutes, or until juices run clear and internal chicken temp is 165º.
Pretty simple, right? Give it a try this weekend. I promise you won’t think of chicken as boring after that!
