Here’s dinner tonight, y’all, and it’s amazing.

2- 6oz. salmon filets
1 T. red miso
1 T. sake
1 t. honey
1/2 T. tamari
1/4 t. finely grated fresh ginger
1 t. rice wine vinegar
Whisk ingredients well and spoon over salmon fillets set skin side up. Refrigerate 30 min-1hr. Once ready, set oven to broil and let it preheat for about 3 minutes. Remove excess marinade and place salmon skin-side down on a parchment-lined baking sheet. Broil for 8-10 minutes, depending on thickness of fish and desired level of doneness.
Serve with some avocado, brown rice, steamed broccoli and pickled radishes.
QUICKER, Easy Brown Rice:
In a large pasta pot, fill with 3/4 water and bring to boil. Add desired amount of brown rice and boil (like pasta) for 25 minutes. Drain and sit covered for 5 minutes.

Quick Pickled Radishes (or any veggie!)
1/3 c. water
1/3 c. red wine vinegar
1/4 t. chili flake
2 whole garlic cloves
1/4 t. mustard seed
1/2 t. honey
Slice radishes thin and put in any small, heat-safe jar with a lid. In a sauce pan, bring the 6 ingredients to a simmer and pour over the radishes. Cover and let sit for 30+ min.
