I love fish! It’s such a great source of Omega 3s and lean protein. This recipe is super easy and something I turn to when I’m meal prepping, or just need a quick, healthy dinner. Seriously, you can throw this together in less than 10 minutes! And all in one pan!
Add 15-20 minutes for baking time and you have dinner in 30 minutes! Y’all, that’s a win in my book.
Bonus: Get some jasmine rice cooking before starting the fish for some carbs with dinner.
Ingredients:
1 cod fillet per person, about 6 oz
1 bunch of asparagus (will serve about 3 people)
salt & pepper to taste
juice of 1/2 lemon
garlic powder (I never measure garlic, we love it so we sprinkle it liberally. If you’re unsure, sprinkle it as you would salt–just a little. You can always add more later if you want to.)

Preheat oven to 400. Chop off the woody ends of the asparagus and place in a large bowl. Drizzle olive oil, salt, pepper and garlic powder and toss to coat evenly. Set aside.
Rinse cod fillets and pat dry. Place in a 9 x 13 glass baking dish, drizzle fish with more olive oil, about a teaspoon. Rub the olive oil to coat the cod. Sprinkle salt pepper and garlic powder. Pile asparagus in where you can fit it. It’s ok if stalks are on top of one another.
Bake for 15-20 minutes, until fish is white and flakes easily. The asparagus will be soft, but still have some texture to it. Squeeze the half lemon over the whole pan and serve hot. Or let cool and package for meal prep. This heats up wonderfully in the microwave!
