A sweet potato pie smoothie recipe soo good, you’ll only think you’re being bad!
I had my wisdom teeth removed the other day. Can you say YUCK?! It was awful! The day of, I couldn’t eat anything before and afterwards I was so swollen, sore, and sick from the sedative that I ended up going the entire day without eating or drinking anything. As I was recuperating in the following days, I had to get creative with what I could eat. I was browsing Pinterest’s food categories (which is SUCH a bad idea when you can’t chew) and came across some roasted sweet potatoes that looked quite groovy. Well the light bulb went on and I hopped off the couch to try out the recipe that was forming in my head.
And, well, it’s awesome if I do say so myself. It hits that sweet tooth craving, fills you up, and gets you a bit of protein which helps keep you feeling full. To me, it tastes like sweet potato pie. Ugh. I love it.
Sweet potatoes are great for you! They’re one of nature’s best sources of beta-carotene (a key antioxidant) and vitamin A. They have also been shown in studies to reduce inflammation in the body and stabilize blood glucose levels. And don’t forget about the fiber! Fiber is key to help keep your digestive system working normally.
So give this simple recipe a try and let me know how you like it!
Ingredients:
1 c. cooked sweet potato (peeled and steamed or boiled until soft)
1 scoop vanilla protein powder (if you’re staying away from dairy, opt for a non-whey protein powder)
A dash of cinnamon, a pinch of allspice, a pinch of nutmeg
¾-1 c. almond milk, depending on how thick you like your smoothie
Combine all ingredients in a blender and blend until smooth.
I threw the potatoes still hot from the stove into my blender and had a warm smoothie… it was borderline nirvana.
Are you a sweet potato fan? What’s your favorite way to eat them?
