Light & Healthy Caprese Chicken

One of my favorite light and healthy lunches! And Y’ALL’S most requested recipe. I love this for hot summer days when you don’t really feel like cooking. It’s even good cold! I love to make this for a quick, tasty meal that’s packed with protein.

▫️Chicken breasts
▫️Cherry tomatoes
▫️Mozzarella (I love the marinated mozz balls from the olive section at the grocery store)
▫️Fresh basil
▫️Balsamic glaze (@traderjoes has a great one)

▪️Chop tomatoes, mozz and basil into small chunks and mix into a ‘salsa.’
▪️Season chicken breasts with salt, pepper, garlic and a little oregano and grill or cook in skillet until internal temp reaches 165°.
▪️Top chicken breasts with caprese salsa and drizzle with balsamic glaze.
